NORTHFIELD, Minn. December 11, 2011 — Salads are often the sensible, yet boring option on many dinner tables. By adding a new twist to old favorites, you will increase the nutritional value and move your salad from silent to stunning. Make your salad the talk of the party and be ready to share the recipe.
Both of these recipes are easy and both start with cabbage.
One good old stand-by is fresh cole slaw. Try this recipe that adds broccoli slaw to the cabbage. This item can be found in the area near the shredded cabbage in many grocery stores. It is made from the stem of broccoli plants and is pre-shredded. Crunch and color make this salad a standout.
Broccoli Cole Slaw
1 bag chopped cabbage cole slaw mix
1 bag broccoli slaw
1 cup walnut pieces
1 cup dried cranberries
a pint cole slaw dressing (optional: cole slaw dressing with pineapple)
Combine slaws, nuts and raisin in a large bowl. Mix with dressing just before serving.
Taco Salad is as delicious in the winter as in the summer. This version uses shredded cabbage, which is more nutritious and stays crisper than iceberg lettuce. Busy cooks can purchase dressing and do it yourselfers can make their own. For calorie control, use ground turkey and reduced fat cheese.
Taco Salad
1 bag of shredded cabbage
1 pound browned hamburger (drained)
2 cans drained and rinsed kidney beans or black beans
2 cups shredded cheddar cheese
1 small container sweet cherry tomatoes
1 package taco seasoning
Dressing: Buy French, Ranch or Western dressing (8 oz. bottle)
Or make your own dressing – see recipe below
1 cup salad oil
3/4 cup sugar
1 (10 3/4 ounce) can tomato soup
1/2 cup vinegar
1/8 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon celery seed
1/4 teaspoon black pepper
4 tbsp dry taco seasoning
Brown meat and add taco seasoning to meat, following the directions on the taco seasoning package. Cool. Mix dressing ingredients. Layer other ingredients in the order listed in a large container. Pour dressing over salad to coat ingredients lightly just before serving. (You may have some dressing left over depending upon how much you like to use on your salads)
