Apple squares from chef Michael Flores

A man of many hats, Michael Flores is a busy trained chef, cooking instructor, spokesman, cookbook author, brother, son, friend and avid entertainer.

SAN ANTONIO, Texas -- This breakfast-friendly recipe could be served for dessert with vanilla ice cream. With apples in season, why not try this simple recipe?

Apple Squares

1 apple, peeled, cored, diced

1 teaspoon baking soda

1 cup white sugar

1 cup brown sugar

1 teaspoon cinnamon

2 cups flour

1 cup (2 sticks) butter, melted

1 teaspoon vanilla extract

2 eggs

1 cup Texas pecans, chopped     

Sprinkle the baking soda over the apples and set aside.  Thoroughly blend the two sugars and cinnamon together.  Next add the flour.  Stir in butter followed by eggs and vanilla; combine well.  Finally, stir in the melted butter, apples, and pecans.  Pour into a greased 13"x 9" pan and bake at 350oF. for 40 minutes, or until a toothpick comes out clean.
